The production of food grade products in the papermaking industry often require monitoring the level of microorganisms in the finished product. In some cases the allowed amount of microorganisms is based on the “Dairyman’s Standard” which has been in use for over 50 years. Questions are frequently asked concerning the monitoring of the microorganisms, e.g. “is there an official protocol for testing?” “how frequently should the finished product be testing”?, “what are the penalties for non-compliance”?, etc. Unfortunately no set answers to these questions and other regarding food grade products seem to exist. Further complicating the issue is the increased use of recycled pulp and alkaline conditions which make biological control that must more difficult. This panel discussion, which will include representatives from the FDA and EPA, will address these and other issues concerning regulatory guidelines that specifically relate to the manufacture of sanitary paper products.
