Modified atmosphere packaging (MAP) of fresh red meat items is on the rise. A variety of technologies have been developed to deliver centrally-prepared meat products from the processor to the retailer in packages ready to be place in the retail case for sale to consumers. Strict adherence to basic meat science disciplines is vital to the success of these MAP programs. Various gas mixtures and an assortment of technologically-advanced packaging materials and equipment are then utilized as part of a total program designed to extend the shelf-life of fresh red meat consumer cuts and maximize their appearance.
