EVOH Map (Modified Atmosphere Packaging) for Fresh Meat and the Effects of Moisture on Oxygen Barrier of EVOH, 2001 Polymers Laminations & Coatings Conference Proceedings

Robert B. Armstrong--For many years glass and metal containers were the only acceptable packaging for oxygen sensitive foods. Barrier polymers in coextruded barrier packaging have challenged metal and glass for long and short shelf life food packaging. This paper is a focused review of the use of EVOH in Modified Atmosphere Packaging (MAP) for fresh meat and the effect of moisture on the oxygen gas barrier properties of EVAL EVOH (ethylene vinyl alcohol resins). Practical countermeasures to minimize the effect such moisture has on the barrier of EVOH are described.
